Hello everyone.  I have completed my work out this morning which was one of my exercise DVD’s and focused on a core workout.  Again, today I could feel how well I am progressing strength wise and with my range of motion already.  Not sure there is any weight loss yet but I am definitely heading in the right direction, and I am in this for the long haul to make some lifelong changes to habits and choices.

The challenge is going very well so far and I am still not snacking between those meals which I am really chuffed about.

I wanted to share another recipe with you that I made up the other night.  I made a pizza but used a wholemeal tortilla wrap as the base.  I love pizza but always feel bloated and over full after eating all that doughy base, even the thin crust ones make me feel stuffed.  I remembered an old work colleague mentioned to me once to use a tortilla as a base so I thought I would give it a go.  

I started by putting dollops of red pesto, sundried tomato paste and tomato puree onto the wrap and spread it all over to set up the base. You can use whatever you like and combine however you want with this.


I then sprinkled on a thin layer of grated cheddar, layered on some fine slices of courgette.


Then finished off with slices of tomato, chopped onion, sliced mushrooms and mozzarella cheese.  I then baked in the oven at 180 degrees (fan assisted oven) for 15 mins and I must say it was beautiful :-)


The beauty of this recipe is that you have total control and will most likely have all the ingredients in your cupboards and fridge already.  You can make it as loaded with toppings as you want and in any combination, you could even use cottage cheese if you are cutting back on normal cheese, I might try that option out this weekend!  For more pictures for this challenge please follow my Instagram account Channel Freedom here.
